Gluten Free Beach Bars

Life can sure get busy. Over the past few months we have been working, traveling, sold our first home, and just bought a less than charming 99 year old house in Vancouver that we’ll be renovating over the summer. Our reprieve from the dust and noise will no doubt be picnics in the parks or beautiful beaches.

This afternoon our good friend had her birthday at Centennial Beach in Tsawwassen. I made a green salad and these yummy treats that are shamelessly stolen from somewhere (can’t recall where)! They were a huge hit. Coconut, chocolate chips, peanut butter chocolate chips, chopped peanuts, condensed milk, and almonds. So good!

Layered Lemon Cake

Lemons? Check. Eggs? Check. Gluten free flour? Check.

I’ve picked up the birthday card, the gift certificate, and all that is left is the cake. My mother-in-law is turning 50 and we’re so excited for her birthday. All of the family will be there and I’m making a cake.  The flavour of choice? Lemon.

Blueberry Muffins

I have vivid memories of my childhood. I grew up in a place where family and food were always around. It was comfortable.

More or less raised in my parents’ restaurant, which had been my grandparents’ before that, the little me would climb onto a chair at the staff table for many of my meals. It wasn’t the grilled cheese sandwich, soup, or chicken nuggets that I loved. No, it was the blueberry muffins.

Gluten Free Onion Rings

There’s a certain exhilaration that comes from running. I love the sound my feet make when they hit the pavement and the willpower it takes to convince myself not to give up.

Usually, I busy myself with the beautiful scenery: endless fields connected to the peaceful ocean, a tree holding an eagle’s nest, and the sun-kissed autumn shades that remind us just how fleeting fall is.

But, not today! No. Today, all I could think about were onion rings. We ran by the A&W and that was all it took. The artery clogging O’s were on my mind.

Gluten Free Whoopie Pies

I’ve never had a Whoopie Pie before but I was browsing around on the Martha Stewart website and as soon as I saw the picture, I knew I really wanted to try it. The gluten-free version, of course.

To be perfectly honest, I wasn’t sure if I was going to be able to make them. I’ve always been more of a bake via box kind of girl but lately I’ve been feeling more at home in the kitchen. More free to experiment and try the “hard” things and, interestingly enough, I’ve been preferring the homemade challenge to the store-bought one.

Maybe that’s just part of the process. Once you are gluten-free for a while you start to appreciate food and the complexities of it a lot more.

Either way, these were amazing and I couldn’t let any of my gluten-free friends miss out. The whoopie pies were more like two light puffy pieces of chocolate cake with a nice Oreo-like vanilla icing in the middle, rather than a cookie, but they were light, airy, and instantly gobbled up by my hubby and friends. Success!

Flourless Chocolate Cake

The first time I tried a flourless chocolate cake we were on vacation eating dinner with friends and I was shocked to learn a restaurant finally had a dessert I could eat. After going through the standard gluten-free rigmarole, I was assured there was no wheat, no gluten, no flour. I was a happy camper and resolved that I would learn how to make it.

I’m such a sucker for chocolate and so is the rest of our family. Chocolate chips, cupcakes, and cake are all good, and this flourless chocolate cake is a big hit in our house when we want a chocolate fix that isn’t too heavy. Happy Baking! Continue reading “Flourless Chocolate Cake” »

Chocolate Chip Cookies

C is for cookie. That’s good enough for me.

I don’t remember hearing this song on Sesame Street when I was a kid but I certainly heard it when I was in University. Come to think about it, maybe that’s how the freshman fifteen entered my life.

I used to absolutely love those pumpkin muffins filled with cream cheese frosting that Starbucks sells at this time of year. Oh, how I’ve missed them! And nothing quite says fall like a pumpkin spice muffin mixed with a light cream cheese frosting. It’s a little piece of heaven. I LOVE pumpkin and I am so happy to report that these are soft, chewy, and delightful. A great gluten-free replacement for a fall favourite!
