I’ve never had a Whoopie Pie before but I was browsing around on the Martha Stewart website and as soon as I saw the picture, I knew I really wanted to try it. The gluten-free version, of course.
To be perfectly honest, I wasn’t sure if I was going to be able to make them. I’ve always been more of a bake via box kind of girl but lately I’ve been feeling more at home in the kitchen. More free to experiment and try the “hard” things and, interestingly enough, I’ve been preferring the homemade challenge to the store-bought one.
Maybe that’s just part of the process. Once you are gluten-free for a while you start to appreciate food and the complexities of it a lot more.
Either way, these were amazing and I couldn’t let any of my gluten-free friends miss out. The whoopie pies were more like two light puffy pieces of chocolate cake with a nice Oreo-like vanilla icing in the middle, rather than a cookie, but they were light, airy, and instantly gobbled up by my hubby and friends.
